SOUP - Old recipe
Serves
6 people:
Hot broth |
Light meat sauce
|
Toasted bread
|
Butter
|
Whole eggs
(very fresh)
|
Parmesan cheese
|
Salt
|
Preparation
Heat the butter and brown, or rather fry two loafs of bread and place them in a bowl.
Break two very fresh whole eggs over them and add some Parmesan cheese and a pinch of salt.
Slowly pour the hot broth on one side over the eggs, until they don’t break.
You can add half a spoonful meat
sauce.
The
dish
This is a very poor yet
nutritious dish. In the past it was a complete meal – a unique dish that could replace both the soup and the main
dish.
It looks very easy to prepare but not everybody is able to cook it.
The
Wine
Since it is a simple dish, it must be accompanied by a simple white
wine, without the typical tannins of the red wines since it is not fat.
A mature, harmonious, morbid, slightly acid, non-tannic
wine, middle-structured wine with a neutral flavour would be
ideal.
