6 big artichokes |
parsley |
bread crumbs |
extra virgin olive oil |
2 garlic cloves |
salt and pepper |
Preparation
Remove the outer
tough leaves and the fuzzy choke.
In a bowl mix 3 tablespoons of bread crumbs with 2 finely chopped garlic
cloves, chopped parsley, salt, pepper, and enough oil to blend the mixture.
Put this filling
between the leaves and in the centre of the artichikes, then put them close
together in a pan, stems facing down. Add 3 glasses of white wine and 1
glass of water, put a lid on and leave to cook on a moderate flame for about
1 hour.
Then remove the lid
and leave the artichokes to fry lightly and take on colour.
