The restaurant "Checchino since
1887", is now one-hundred and ten years old, a temple of the Roman
gastronomy, where around the 1890's, what with chance and what with wisdom, as in every historical great invention, "la sora Ferminia" (the daughter of Lorenzo and Clorinda, founders of the restaurant ) invents "la coda alla vaccinara".
The original dish is the Roman popular cuisine's international symbol and was born by a "quarter's cuisine", influenced by the before standing slaughter-house, by a poor gastronomy, based on chitterlings, considered as refuse and given as a present to the "vaccinari"(slaughterers) or to the"scortichini"(tanners), as an addition to their
wages.
It has to be added, in the "Checchino"'s gastronomic range, all the roman cuisine, like that of "quinto quarto", "il padellotto", "i rigatoni con la pajata", "l'insalata di zampi", "la trippa", "le animelle", "il cervello" and "gli schienali", together with the particular "bue garofolato", the ancient rustic dish whose original recipe is owned by "Checchino".
Checchino's cellar is unique in its genre because it is completely inside the "Monte di Testaccio" called "dei Cocci". And that's just for this reason that climatizing is natural, with uniform temperature and dampness, either during summer or winter. This characteristic guarantees an excellent ripening of
wines.
The restaurant is a part of the "Associazione Locali Storici d'Italia" and of the "Unione Ristoranti del Buon Ricordo".
On the Herald Tribune of the 17th October 1994 appeared to be as the 7th restaurant in the World and the first in Italy as for its
category.
