A few minutes walk from the
ruins of Pompei, in a delightful atmosphere, "Il Principe" restaurant was established. In rooms where the walls reproduce the murals and mosaics from ancient Pompei, Marco and Pina, introduce the most refined and original Imperial Roman
dishes. It was in fact from imperial Rome through a millenarian history of ancient flavours that the most authentic "Mediterranean Cuisine" was born.
This is the cuisine which, with passion and open hospitality the young couple, Marco e Pina Carli, offer to those who wish to partake in an unforgettable eating
experience.
Marco Carli, born
in tuscany, at the age of twenty was already a professional maitre. A year
later he was elected first maitre of Hotel d'Italia and opened the
prestigious Hotel Ritz in Forte dei Marmi. And it was there that Marco met
Pina, a young girl from Pompei, already a successful manager in the
tourist field and owner of two hotels. She is deeply in love with
the generous earth of southern Italy and culinary art, but she
particularly loves the healthy Mediterranean way of cooking. Marco moved
to Pompei where, with Pina, they began their search for genesis of the
Mediterranean cuisine, finding it thanks to old testimonies and directly
from recovered archeological evidence from the ruins.

with its elegant atmosphere, their frescoes and mosaiics
reproductions in Pompeii style and the impeccable service which is a
tradition, not a luxury and particularly in the gastronomic culture

Murales of the
highest prestige cover the walls of the Principe and dishes served to its
guests recall the original recipes of ancient Pompeii respecting the
flavour and exhalting, the characteristics and the genuineness of the
native product.
The Principe soon became the meeting place for the maximum expression of
the culture, art, theatre, politics and for the international
jet-set.
Since the first days of activity Marco and Pina Carli have been able to welcome in their restaurant guests of world wide reputation and all of them were charmed with the gastronomic welcome and professional qualities that only The Principe can prodive with its exclusive
Mediterranean cousine. From Mr. Matislav Rostropovich, who was shortly followed by the brilliant Lorin
Maazel, to George Bush; from Frank Sinatra to Irene Papas, Rocco Barocco, Lino Banfi, Ugo Tognazzi... The latter, on different occasions, gave personal suggestions about
recipes.

IL
PRINCIPE, decorated with I star on Michelin guide, takes part in the
most important international and national guides. Its gastronomic
direction is based on a solid passion for ancient traditions
researched by the owners. In the IL
PRINCIPE menu there are both national plates and plates which takes
by ancient and traditional Neapolitan cooking. The experience in
this particular field of gastronomy, building through all the
bibliography known is supported by the use of local products. The
recipes, which are adapted to the contemporaneous taste, preserve
their original characteristics.
