A few simple rules for you to remember.
A
barbecue is an informal occasion, or rather, one that has friendly overtones.
Clothing is generally sportswear and each participant can be asked to contribute to the preparation of the meal, serving, or anything else that may be
required. The main course should be grilled meat or fish, which is well accompanied by different
salads, cheeses, fruit and pastries.
Plastic plates and
paper serviettes are perfectly suitable for a barbecue.
A traditional barbecue is organised in the garden and can be based around meat, fish or vegetables.
There are many types of barbecue, some have grills or plates supplied with volcanic rock, charcoal or spheres of combustible
fuel. Open barbecues are useful for roasting larger fish, whilst covered barbecues are more suitable for big meat
grills.

| Preparation |
Start the lunch with the appetising flavour of the sardines in lemon and Sichuan
pepper, which will be followed by the grilled swordfish with vine leaves and accompanied by salad dressed with olive oil and
lemon. The swordfish can be prepared in advance and cooked just before being
served.
For dessert, prepare the coconut praline in advance and keep in an airtight container, free from
humidity. |

begin: offer herb or fruit flavoured mineral water, then serve a vintage Semillon or a slightly woody flavoured Chardonnay with the sardines and, for the
swordfish, continue with the Semillon, or change to a dry
Riesling. Finish with a sweet, flowery wine and finally, coffee. |
